Yeast extract is obtained by aqueous extraction of autolyzed Baker's yeast (saccharomyces cerevisiae). It has a high vitamin content and thus provides excellent growth conditions for a number of microorganisms. It is usually added to culture media as a source of vitamins at a concentration of about 3 g/liter.
